Our live lobsters are 100% organic, and responsibly managed with independent sustainability accreditation from the Marine Stewardship Council. Enjoyed cooked, partially cooked or even raw as sashimi, these lobsters are best prepared simply. When the star of the show is this good, let it shine! These are the center of attention and conversation kick-starters, cook up a few of these for family or friends and it will be unforgettable!
Once you have your live Lobsters it is best to cook and eat them the same day. If that is not suitable, keep them in the coolest part of your refrigerator in a closed container large enough to hold them, and cover them with the damp paper packaging that they came with to allow moist air flow (the moist paper contains the saltwater that they need). Cook them the next day, if keeping longer you may freeze them and thaw another time. If you want to put them to sleep before cooking them, put them in the freezer for 35 mins. Not much longer or they will start to freeze.
You may then cut them in half by inserting the sharp point of a knife through the head and splitting the Lobster in half down the length from head to tail. The halves can be grilled or pan fried. Alternatively, you may leave them whole and boil them. If you’re going to boil your lobster, salt the water heavily (about ½ cup of salt for every 2.5 litres of water). As with most seafood, the cooking water should taste of the sea. A 500gm lobster will take about 12 minutes to cook, then 10 minutes for the next 500gm, then about 5 minutes per 500gm after that. After cooking, leave it to cool without rinsing it.
